Ready to Swim

On the way home from work my mom called and asked for help painting her kitchen ceiling. We didn’t have any solid plans so decided to head over after dinner.

Heath and I were going meat free last night and had a lot of good veggies so fired up the grill and tossed them on. We also cooked a bit of chicken for the girls.


eggplant, sweet potatoes, broccoli, yellow squash, mushrooms, pineapple, asparagus and the chicken.

Heath had gotten some rice going before hand and I warmed up some beans. It was a little cool so we decided to eat inside and loaded up everyone’s plates.

A little tip we just learned. Soak brown rice in water for at least 3 hours before cooking or overnight is even better. It is so much softer and more like white rice.

Dinner was good but too salty. Getting the right mix of oil, seasonings and salt has been an interesting experiment to make grilled veggies good.

After dinner we loaded up the van and headed to Mom’s. She opened up the hot tub and the girls hopped in.

They had a lot of fun splashing around.

Mom and I tossed a coat of paint on the kitchen ceiling and finished up just as the girls got out. Then we headed home and put the girls in bed.

Heath and I went downstairs and did some major cleaning until past my normal bedtime.
