We had leftover pasta salad from the weekend to get rid of and I had put some split peas in the crock pot all day. When heath got home she blended the peas and mixed them with the pasta salad and warmed it up into a delicious soup. She also made the girls a quesadilla to split. Bean ate a bunch of soup, Pumpkin was not really into it.
After dinner we worked on cleaning up. Heath did the kitchen and I tried to fold up all the blankets, pads, sleeping bags and stuff from our backyard campout but the girls were obsessed with jumping on whatever I was working on.
So I moved on to the tent in the garage until they were distracted.
Heath went to Peanuts scout meeting and I got Bean in bed after some books and teeth brushing. Then Pumpkin and I read 1 book and then played 1 board game.
After our game we read another story.
She has been studying nutrition at preschool and is really interested in where food comes from and is getting really good knowing what food group things go in. In this story a boy makes pancakes from scratch, like really from scratch, he cuts the wheat, mills it, milks the cow, churns the butter etc. Then his mom helps him make pancakes from the ingredients. Pumpkin and I decided to try this out for our breakfast.
Then she went to bed excited to get up early and help make breakfast. I got busy cooking dinner for tonight and dessert. I made a lasagna but instead of noodles I used zucchini.
I cut them lengthwise, battered them in egg and wheat flour, baked them a bit and then layered them in with the other ingredients. We will try it out tonight but I did something similar with eggplant that was really good. While working on this I made another batch of black bean brownies.
These have only bananas, black beans, unsweetened coco powder, eggs, vanilla, peanut butter, baking powder and some chocolate chips in them. No oil, sugar or flour.
Heath and Peanut came home and tasted them with me and they were pretty good. We did some measuring and got ready to buy a new trampoline mat and then went to bed.
At 1:45 my alarm went off and I headed outside with the camera.
I snapped a few pictures of the blood moon and then got Heath up to see.
She checked it out and went right back to bed. I watched it change more and more red/orange for about 30 minutes before going to bed.
I had some trouble getting back to sleep and too soon my alarm went off. I got up and ran a mile then got a sleepy Pumpkin up.
We followed the book and mixed up our ingredients.

We cooked 1 pancake with just flour, milk and egg and then I added some sugar and baking powder and we cooked some more. For the last batch I added a bunch of oatmeal. We found some strawberry jam to top them with just like the book.
She was pretty excited and in a great mood. I thought they were better then expected but none of the kids really ate much.
