It’s been pretty nice out the last few days. I’ve been working some odd hours and doing odd jobs for our fundraiser at work. Tuesday night Heath and the girls came to get me from work and we went right over to Loose Park.
We played on the swings and slides and other stuff.
We stayed pretty long and by the time we left we were really hungry. No one felt like going home and waiting for me to cook so we decided to check out the salad bar at Hyvee.
Everyone ate a lot and ate really pretty healthy. Besides lots of salad we had pasta, fruit, beans, and it was taco Tuesday so we ate some Mexican too. At the end we started in on desserts and lost a lot of the healthy eating.
Everyone had a good meal and left very full so we rode the horse.
The rest of the night we just digested and got to bed.
Last night we I tossed a lasagna in the oven and we headed out on our bikes.
We rode along the trail and decided to head over to Tony’s house and see what he was up to. Once there we talked with him and the girls climbed around on his tables and furniture for a bit and then we headed back to the trail.
We looked for ducks and turtles and peddled our way home.
We had brought grapes for the girls but they ate them all and were getting hungry for dinner. Once home we cooked the lasagna a bit more and got the table ready. Then we dished up.
The lasagna had 1/2 lbs of ground turkey, 1/2 a container of cottage cheese, 1/2 a jar of spaghetti sauce, some shredded cheese some spinach and in place of noodles I used sliced eggplant. I was not sure how it would go over, how it would taste or how the girls would react but I was surprised everyone loved it.
I had sliced the big eggplant, dipped the slices in egg and then dusted them in a thin layer of wheat flour, salt and pepper. I baked them for a while as the turkey was browning and then just used them like noodles layering them in.
We nearly killed the whole 9×9 pan. Bean was beat and went to bed after dinner and fell right asleep. Pumpkin got on her pajamas and then opened up a special backpack from school.
The backpack had a bunch of homework activities for us to do and the 3 of us had a lot of fun reading, talking and putting together puzzles.
We learned about reading, colors and healthy eating. After the backpack was done we read together for a while and then Pumpkin went to bed and Heath and I watched some TV before bed.
